Start with a good sourdough white bread. Spread mayo on it. Add chopped Italian basil, marjoram, garlic optional, red onion optional, sliced tomato, salt, pepper, dried Italian herbs optional, grated Parmesan (optional), and sliced mozzarella cheese. Broil or toast for 12-15 minutes, or until tomato is soft and the cheese bubbling.
You can make a basic version with just the bread, mayo, salt and pepper, tomato and mozzarella, which is also very good. You can just enjoy the tomato flavor.
Adding a very thin slice of cheese on top of the mayo bread, before adding the herbs and tomatoes, can keep the bread from getting too soggy. I usually do not do that. The bread tastes great with all of the flavors soaking into it. Yum!
